First timer in cutting back & need help w/ plant name!

Gutsy move for me...I decided this was the year I would take the risk and cut back some plants before they bloom. I cut 6" off the top of Platycons (cut stem back to a leaf - not bud)...is that OK? I also deadheaded the front group of Phlox and left the back cluster alone to hopefully stagger growth.

Same for Monardia and Boltonia and Goldenrod.

Sure hope I used the correct technique!

Question...can you tell me the name of this plant by this description - tall (3 feet already, thick whitish stems, big leaves that have 3 cut outs on each side and one at the top (sort of like a Columbine, but bigger and not as deep a green).

Almost makes me think of an Oak Leaf, but the edges are rounded rather than pointed. I think it blooms with a creamy white flower...but don't remember it. I know this isn't too helpful, but would appreciate any help. Oh, and I cut this one back a few inches, too...to the first leaf. When I did that, there was a white milky sap.
