winter humidity in GH

In a climate like mine, where dewpoints in winter are often in the teens or lower during colder weather, does a typical smaller sized greenhouse tend towards being too dry, or too humid?

How have some of you controlled this?

My second question - would winters in a z7 climate (moderate levels of sunshine but many dark, dreary days too, avg highs low to mid 40s, avg lows mid 20s) be often subject to heating at night, ventilation fans running during the day, then all over again?
