Tomatoes in Louisiana greenhouse - help!

I decided to overwinter a couple of tomato plants in my zone 8b greenhouse so I would have clone material for the spring. I have heard tomatoes can be difficult to grow in a greenhouse because of the temperature requirements. I only keep my greenhouse heated betweeen 52 and 55 degrees on cold nights, but to my surprise the tomato plants began to bloom and have set much fruit. I have one cherry tomato (Sweet 100) and one Better Boy plant. The Better Boy just began producing, and the fruit is still very small, but the Sweet 100 is LOADED with fruit, some of them now mature size. None of the mature size fruit is ripening yet - is this normal in a greenhouse situation? I have them under 30% shade cloth because they are housed with orchids. Will they just take longer to ripen under the shade cloth, or do I need to take measures to assist? Please help if you have any answers. Thank you!
