how to plant my mail-order plants

I just received three lovely plants in the mail: a water iris, a dwarf cattail, and a dwarf pickerel. The instructions are to plant in loamy soil, not potting soil.

I'm wonder what the difference is between the plants that you can put in the water bare rooted and these plants. If I really need the soil (and I guess I do), should I put rocks on top of it to keep the soil from floating away, or is the clay-i-ness of the soil supposed to keep it stuck together?

(just to be specific, I want these plants IN the pond even though they are officially called "bog plants")
