Best pot/medium for low humidity

I have a couple of Phalenopsis, one Phragmipedium and one Dendrobiaum. When we lived near the coast in San Diego and they did quite well. Over a year ago, we moved to the SF bay area, in a house in the woods with poor insulation. Our heater is on probably 9 months a year, and because of poor insulation, it runs more than in our old house.

The plants are not thriving. The roots that used to be on the tops of the pots have dried up, despite watering once a week (I water over the sink and let the water drain).

I'm starting to think that low humidity is a problem due to the heater. All the orchids are potted in a clay orchid pot- has holes in the side, but not on the bottom. They plants are kept on trays with pebbles under them with water (the pots are above the water level). I water about once a week. One thing I recently noticed is that the top dries out fast, but the medium in the bottom of the pots seems to still be quite moist.

What kind of pot and medium would be best for this situation?
