Cooking with Granny Smith, Yellow Delicious

I just made Apple Betty. One with Granny Smith, one with yellow delicious.

I was expecting more of the Granny Smith. It's hard and tart, should be a good cooking apple. Instead, it turned to mush and the flavor was only average. If you are going to cook with Granny, be very careful to not over-cook. Remove from heat as soon as the apples are tender.

Yellow delicious did better than I expected. I wasn't expecting much because it is a soft apple with mild flavor. It held it's shape better than Granny, and has a mild flavor, but it does taste like apple. I think yellow delicious would be an OK choice if you are cooking for children.

Yellow delicious is a flop as a dried apple. It just doesn't have enough flavor and ended up tasteless.

So far, my winner for dried apples is Gravenstein. Fuji dried well, also, giving a mild dried apple with concentrated Fuji flavor that would be excellent for children.
