I'm almost selfishly hoping against some good answers. Not really, but I just got rid of a bunch of samples from our kitchen re-do. The place didn't want them back because the lots were exhausted. The only thing I could think of was stepping stones, but these pieces were too small for that. I did save a couple for hot plate trivets.

They might be a good size for a table top. Or side table top. Or use bricks stacked up to make a column and put it on top for a plant stand.

If they are bigger, could you put them on concrete blocks to make a bench or a potting table/plant stand?

Or stand them on their sides behind a special plant to 'showcase' it.

Prop it against a wall and hook a 'closet door hanger' over the top- use that to hang a wreath or other decoration on it.

Partially bury it on its side and use garden stakes or rebar to support it upright to make it into a short decorative fence.

If you have a small lavatory outside use it for a potting counter next to the lavatory.

For smaller pieces of granite you do not know what to do with here are a few ideas.
Epoxy a trinket of interest on it. Like an old skeleton key
a sterling cross,souvenir spoons, wrought iron or other metal squiggles. Maybe a nail and black marble for an exclamation mark.
Add A domino or other game piece. A coin can be attached temporarily with ticky tack if it is valuable.Make a daisy or othet art form with flattened marbles.
Use as a base for a lamp,vase,candlestand etc.
Add a cheeseball and cellophane and give as a gift this Christmas.
You can also use them under pots to keep the pot off the patio.
As a paperweight or a doorstop,fill ins for missing bricks in the walkway
