Which rootstock for Espalier?

I bought 2 apple trees the other day they were going cheap so I thought why not....as you do. :)

Anyway both are pippin varieties, one is called 'fiesta' and the other is 'court pendu plat'. The fiesta is on M27 and the other MM106.

I got home and was wondering what to do with my new purchases when the idea came to do an Espalier. I've been reading that some do MM106 amongst others, so that is where I'm upto. I like the type that splits from 1 to 2 to 4 upwards. If that makes sense.

Any thoughts?

Also I have about 10ft of wall space, which has a basic raised flower bed with some plants that I don't mind removing.
