Ichi kei Jiro
Sharon is the brand for persimmon in Israel. I currently grow in zone 6 the following: Saijo, Russyanka, Great wall, Hana Fuyu, Keener, and a Korean persimmon.
Many growers have been successful with Sheng but it's an astringent variety.

I've got Ichi Ke Kei Jiro in its third year. This year it gave me two flowers, but they fell off without progressing to fruit. Hopefully next year.

I think I would also consider Masemato Wase Fuyu (spelling??) were I looking to add a second variety. Its also a non-astringent variety.

I can't recall where, but it seems that I read - maybe in a CRFG online article? - that 'Sharon' fruit are persimmons of one or more astringent-til-ripe varieties that have been picked while still firm, and have had the astringency removed chemically.
I'll second the recommendations of Ichi, MW Fuyu, and Hana Fuyu.

I ran into Supper H mart, a korean grocery store, on the weekend and bought some 'sharon persimmon' imported from Israel. on the box it says 'world sweetest persimmon' and that's obsolutelly true. The persimmon is so sweet, i cannot resist.

What exactly the variety is that? can you advice?

I have spent lot of time searching online but cannot find a nursery selling 'triumph' persimmon variety (Diospyros kaki cultivar Triumph)

I found the answer for my question!

Any kind of persimmon fruit exported from Israel will be named 'Sharron Fruit' as the commercial product name.

There is no such 'Triumph' cultivar! 'Triumph' is reffered to chemical process to remove the astringent from the havested persimmon fruits before shipping and selling to the consummer.

Now going down to the question: what sweetest asian persimmon we can find. Any answer couldbe subjective! The nurseries are confusing the gardeners in terms of what persimmon is sweet and very sweet. They name different cultivars as below:

'Triumph' is a named-variety of astringent-til-ripe Asian persimmon. It is the most widely planted variety in Israel, and the astringency in the fruit is removed chemically by some process using CO2, with them subsequently marketed as 'Sharon Fruit'. The CRFG Fruit Facts article you referenced confirms this

I suppose any non-astringent variety could be treated similarly and sold as 'Sharon Fruit', but all I've ever seen in the groceries here were the flat, somewhat squarish, Fuyu-type, which I presume are 'Triumph'.

I've checked my sources, and not been able to find a nursery that offers Triumph either, and it's not listed in the available accessions at the NCGR website(but I know they have more than they're showing - I've seen a list of 140+ accessions). But I've seen a number of technical papers that describe fruiting performance/sensitivity to ethylene, etc. in Triumph, compared to Giant Fuyu, Hachiya, etc.
