Bok choy, Pak choi, Bok choi which ever spelling you go by

Can anybody help me out. I have never grown these before. I am planning on growing some to see how they do. An organization in Kansas is promoting them along with 9 other lesser known vegetables. I am planning on having most of them for sale at the Farmers Market.

First of all, what do you do with them. How do they taste? I have seen larger ones, baby ones, medium sized ones in catalogs. What is the best?

How do they grow? Can I plant them out super early in a High Tunnel? Do they do well in cold weather? Do they transplant well?

How much do they sell for?
