Asparagus - Fall Maintenance Questions

This is my first year growing asparagus. I have been planning to cut back the stems, but have been waiting until they turn brown. The plants do not look great, but because of our exceptionally mild fall, most of the stems are still green. I had no insect problems and assume that it will do no harm to allow the stems to turn brown before cutting them, even if it is well into next year?

Also, I have some almost finished compost which is mostly leaves with lots of Starbucks coffee grounds that I would like to add as mulch. Does anyone see a reason why I should not add a couple of inches of this around these plants now? Finally, I would like to know what fertilizer would be best to add next spring and how early I should apply it. I mostly use Espoma Plantone on my other vegetables.
