Grafting old apple trees

We have lots of old apple trees along the fenceline. The fruit is not that great but the spring color is, deep pink to snow white. I was wondering what would happen if I took a bud from a McIntosh and grafted it to an older variety? There is also an older one with deep pink flowers on it but it is too mature to move. What would be the best way to propagate these? If I started some from seed, would they come up true to the deep pink color? There are several seedlings growing beside it now but they are so close I don't know if I can safely dig them out without hurting the mature tree. Any advice? Marg
