High vs. Low Fertilizer Veggies

In the thread on horse manure, snuffy-grow said this:

"When hauled to the garden, then tilled deeply into the black loam we had, it (rich, well composted horse manure) would sometimes be too much fertilizer.I planted jalapeño peppers in that soil, huge plants with minimal yield. But growing onions in that resulted in some huge ones!"

We are often warned against high rates of fertilizer, especially nitrogen. But apparently that does not apply to all vegetables. Please help me sort out the fertilizer hungry veggies from those which are not. Which are which in your experience?
