Amaranth and Quinoa

whiteapple

I've been looking into some grain or seed I can grow in the garden next year for some homegrown protein and flour. I think Amaranth and/or Quinoa is the way to go because they are much easier to thresh as well as being better protein sources. I have found instructions on planting but not much more.

Has anyone out there grown Amaranth or Quinoa for seed purposes (and foliage)?

Are there many furry pest problems because I was thinking I could grow a good amount on the outside of the garden fence around the perimeter?

Thanks!
