Dent corn clarification and husk color as a sign to harvest corn

I had some early yellow variety of corn I planted July 1 (Don't have the variety handy, but I think it was about 67 days to maturity? )

The ears never got very large, so I left them on the stalk to see if they would grow some. They never grew larger. The corn husks turned from green to straw color. When I cooked them they were very chewy and starchy.

The corn had some dents in it. I thought that dent corn was a certain variety of corn for animals? I planted sweet yellow corn. Do all corns become dent corn then if left long enough on the stalk?

Another variety of corn has some purple husks along side the green husks. Is husk color a sign of readiness with determining when to pick corn?

I only have a few plants of each type, so can't just pick them to see what they are like. So trying to harvest them when they are their largest. Next year I hope to plant more so I can feel freer to experiment.
