Pick now? Just how much more ripeness can I expect

Temperatures here in PA are finally about back to normal though rainfall sure isn't anywhere close. Normal means low 70's trending toward the 60's during the day and nights in the 40's (last night was 38).

I still have tomatoes, peppers and eggplants galore. THe tomatoes are slower to achieve that red tone I expect or to be soft. Peppers are mostly staying green and not turning color. No change on eggplants (Not sure if they are growing larger anymore).

At these temps, are these type of plants "done"? Is this the weekend to pick everything?
