cold weather veggies

I know that cool weather veggies like cool weather; they hate hot weather. If you grow them in hot weather, their flavor isn't as good and they just don't grow as well.

However I also know with some cool weather veggies some cool weather veggies are harder than other varieties of cool weather veggies.

The only ones I know of that are really hardy are lettuce and pak choi and that's because I've grown them before?

Which ones are able to stand a light frost without being killed? I know that cold weather will improve the flavor of kale, collards, and even parsnips can be grown in cool weather too (their sweetness improves the cooler it is).

Are root veggies more protected in comparison to other cool weather veggies because the edible part is underneath the soil?
