Curing Winter Squash--can I start now?

I have about 6 north georgia candy roaster squash, all but one have hardened skin. I was going to leave them on the vine until the first frost approached, but the plants are succumbing to mildew and probably other things. Is there any reason to not cut them and cure them now? I'd really like to rip up those plants and get them out of my garden.

Though some of them are quite large, I expect I'll go through them fairly quickly and am not too worried about getting several months of storage. I do want to make sure I cure them properly. I plan on putting them inside in a sunny spot.

Thanks for any advice on my first experiment with winter squash!
