Best persimmon variety to grow in my area?

I should clarify that I'm referring to diospyros kaki or the japanese persimmon. I've got what we call a "fuyu" and it's fruiting. The fruit when hard is sweet and crisp.......but when I let it get ripe, it doesn't seem to be a complex or delicious a taste as the ones I used to remember. I do recall the ones I used to eat were impossible to eat when hard. I really do like eating them at the "apricot jam" stage!

My question is what is the best astringent persimmon/kaki that you've had and likely to do well in my area? I'm in zone 8 or 9 I think.

Also, what does the american persimmon taste like??
