Winter squash questions

I'm growing buttercup squash. I think it is ready to pick, but I'm not sure. How do you tell? The squash feels very firm and is dark green. Do you have tips on how I can store them? It is not exactly "winter" here in southern Arizona, and won't be for 5 more months! So I don't really have a 50 or 60 degree place to store them. Any suggestions? The seed packet said to cure them for 4 weeks before storage. Is this absolutely necessary, or can they be eaten right away? Thank you.
