Comments (3)Thanks for the replies! I don't know why I didn't make the cider-vinegar/fruit fly connection, I have a trap set up in my own kitchen! I have a friend that swears by rinsing her tomatoes and strawberries in vinegar, she never seems to have a problem with ff's in her kitchen. I wonder if it's the diff between vinegar vs apple cider vinegar, hmmm. I don't have a basement, but I do have a slightly chilly spare room, which is keeping the flies away for now. I am planning to cut a hole in a burlap bag and wrap around the rest of the plants and hang them from hooks. Comments (16)To dry them out, I place the seeds on a saucer on top of the fridge-I have a 1/2" gap between the fridge and cabinet above gives me a nice slow seed dryer :) I store them in paper coin envelopes. Comments (9)For all you non pepper junkies out there remember... We're professionals, we have years of practice eating hot stuff, out mouths are callused and the other end has been flame proofed and even now we get surprised like with the seven pot and Naga types and the Trinidads. My advice is start slow, small bites and have some Yogurt, icecream, a can of whipped cream and a gallon of milk handy. And for you matcho types that think you can take it and go ahead an wolf down a whole really hot pod or two I highly recomend a large container of Tux pads for later on. Comments (7)Black vinegar is not the same as soy sauce but can be used as a salt free substitute for soy sauce in many cases. It has a similarly complex flavor, but once you have it, you can decide how you want to use it. I use in in place of soy sauce for marinades, such as the one I made for Ahi tuna this afternoon. As noted above, it can be used in soups as a low salt alternative to soy sauce. It does have a small amount of sodium in it, but it is very minor compared to soy sauce. You can also buy salt-free soy sauce, but the black vinegar is a a much better substitute. I often add lime juice to the salt-free soy sauce to make the flavor better, but that is not necessary with black vinegar, although if you want to use black vinegar as a condiment at the table, adding a bit of lime juice to it may help. The flavor will not be identical to soy sauce, but it will be a flavorful option without so much salt. You just have to experiment with it to see what combinations you like.
