Drying Beans

Hello! New poster here. Any one have any novel ways to dry their in-pod green beans? We always called them leatherbritches or shuckey beans. The family way was to string them but someone told me once they start to shrivel they can be put in a knotted pilloowcase and placed in a clothes dryer for half an hour to help speed up the drying and to kill off any mites that might be present.

We always strung the leatherbreeches on sewing thread. They were snapped and strung so that each piece was at 90 degrees to the adjoining piece and hung them to dry. Never thought of clothes dryer, of course we did not have them in those days anyway. Today a dehydrator makes quick work of them and they don't lose thier color like the open air dried ones.

I never knew what leatherbritches (or 'breechers?) were. There's a an old time fiddle tune by that name! Well, I wonder if that's really what the tune is about? Come to GW and learn just about anything. ha.

What type of green bean is best for drying in this manner?

I shy away from resurrecting old threads, but this is the best discussion I've found anywhere on this. So here I go. So I'm a weirdo and do beans in a system of semi-raised beds, two being 3'x18' on either side of a center one being a large mound that's 5'x18'. My strategy has been to plant pole beans in the middle of the rows, and bush beans densely around the sides. The mound has pole beans in the middle and then a lot of space for a jungle of bush beans on the slopes. I felt like I was doing pretty good until I read the above. Those yields are great! Mine aren't quite as high, but after everything else is added in I'm looking at probably 27 lbs of dry beans from around 200sqft of space. I grow Ireland Creek Annie and Rockwell bush beans, and Annie Jackson and Scarlet Runner pole beans. That garden is nicknamed "Jupiter". Hoping to construct "Saturn" in coming years and add a few more varieties. Wealth is burying your hands into a massive bowl of dry beans. :) Phil Whidbey Island WA

Cargamanto Beans (Phaseolus Vulgaris) are a native Colombian bean, used to cook Antioqueño Beans. Also known as Romano, Borlotti or Cranberry beans. I am looking to grow any of these dry bean types in my 2015 garden in zone 5. Have many different types of beans (garden saved from 2013), peppers (garden saved from 2014) and tomato seeds (garden saved from 2014) for trade.

" I think my mistake was to fill the jars to full." Likely, that is the most common mistake and the book instructions don't really make the fill amount clear like NCHFP does. But if there was bean water in the PC then that is a pressure fluctuation issue from adjusting the heat too much. That is what causes siphoning to happen. It's better to use lower heat settings to bring it up to pressure and then do not touch the stove knob than it is to try to turn the heat down after it has reached pressure. Better to let the pressure get a little high then to try to keep it pegged by frequently adjusting the heat. Dave

Leather breeches east of the Blue Ridge, Leather Britches west of the Blue Ridge (Viginia) Shuck beans eastern Kentucky. Usually pole beans, we used Kentucky Wonders.
