how do you mark your seeds/flats?

I have just planted many tomato, pepper and eggplant seeds in flats (I'm in New Zealand...)

While I'm trying to keep the different varieties seperate and clear, I'm sure I'll end up with migrating mystery plants. How many varieties would you plant in an (approx) 16x12 inch flat? I thought about putting them in cells, but as they're in a soiless mix, it seemed like creating work for myself as they'll have to be pricked out so soon. What do you do? I feel like I'm making things harder than they need to be. BTW I can't just take pot-luck as I hope to sell the extras. I'll get in trouble if the black cherry turns out to be a Kelloggs breakfast!
