Kale and Collard question

I'm growing kale and collard in containers and the plants seem very healthy, except for early insect damage which is now under control. The kale leaves have been harvested since May. I have been cutting individual leaves as it becomes ready to harvest and have noticed that as the weeks go by the color is no longer that dark, beautiful green color. In fact, it seems as if there are varying shades of green. The same has been happening with the collard, but to a lesser degree. I feel that they are now as nutritious when they are not dark green. What can I do for my plants or is this common?
