How do you know what's eating tomatoes...

If you don't ever see them? I can do a google search of what it looks like, but I don't see them ever! So far it's just a few tomatoes, but I'd like to catch it early if I can. Holes probably about 1 cm large, sometimes eating out almost the entire middle of the tomato or burrowing around under the skin and creating a patch. I checked inside and nothing is there.

And just for curiousity's sake, the other day I was harvesting on my banana pepper plant and there was a huge bug, perhaps a giant caterpillar? Didn't think to take a picture, it was probably 3 inches long, about 1 1/2 cm wide, green with small spikes at the intersections of its body, and had a lot of what I'm guessing were eggs covering its back. I plucked the whole leaf it was sitting on off, it didn't move. That was the only one before or since. Any ideas?
