what herbs you use in eggplant???

I know this is no a cooking forum but you all are so knowledgeable and a diverse group of fellow gardeners.Been baking my eggplant almost everyday.

have gobs of cookbooks, too.

First used canned organic tomatoes. Hate thought of that BP in the cans. Yuck

Then pricey bottled diced tomato. Before my tomatoes came thru. Using my fresh potted basil. It good as is. But I also have potted parsley, Rosemary, oregano. and thyme. Salt is not needed cause basil is so yummy. Definitely no cheese. Even thought I used to eat cheese it by the handful.LOL

Have any of you all tried other seasonings herbs ???

Unfortunately my 12 or so eggplant plants have about done for. Weather and lack of me not fertilizing and those good for nothing ****** insects.

Suggestions yall???

It really depends on the recipe. Try moussaka, ratatouille, baba ganoush (a/k/a "roasted eggplant dip"). Some interesting recipes here.

Thyme for roasting type things, mint for Middle Eastern salady type things,and parsley for everything

I use a lot of herbs and spices for food and for medicinal purposes. I use basil,oregano,thyme,chili peppers,savory,rosemary,pepper,fennel,garlic, and onions in my Italian cooking; Turmeric,cinnamon,garlic,basil,pepper,chili peppers in my middle eastern and Greek cooking; Sesame seeds,pepper, chili peppers,mint,basil,cilantro,garlic,onions,shiso,ginger,horseradish, and seaweed in my asian cooking; Chili peppers,cilantro,onion,garlic,basil,oregano,hibiscus, and cumin in my Mexican cooking. I use different chili peppers and basil for the dishse depending on the flavor I want. For herbal cures I use a wide range of things depending on my problem. Currently I have an undiagnosed illness that has these symptoms: sores that bleed,fatigue,itch,lumps,crawling sensations,stabbing sensations,sore throat,sore behind,bouts of diarrhea. What seem to do the best for it so far is peppermint oil, lots of it. I have in the past had bouts of candida; for that I use gentian violet from Wal Mart if I have panties that I don't mind being stained purple; If I don't I use a solution of borax(water plus store borax). For arthritis I use Du huo, a combination of Chinese angelica and notoptygerii herbs; this also works for bursitis and tendonitis. For most general infections I pick Echinacea from the yard and eat it fresh. For tough infections I also use licorice with the Echinacea as well as oregon grape stems I pick from around here(I live in Denver, Colorado), or huang lian; both have the same active properties as goldenseal but are not endangered in the wild. For colds,etc. I use Japanese honeysuckle plus cocklebur fruit combination of herbs. For most sore throats I use pickle juice from dill pickles you buy at any store. I use other herbs as the occaisions arise.

Herbalbetty, do you have pics of your garden? It sounds wonderful. I grow herbs for decoration, food, and medicine. I buy at least 6 every spring as many don't winter over here. I especially like variegated and purple foliage plants. Oregano, purple sage, rosemary, marjoram, most thymes, Dusty Miller are only grown as annuals. Even lemon balm is not winter hardy here. I plant many at the edge of the patio so they are easy to get to and enjoy. In my main perennial garden I also have lavender, chives, flax, lovage, Johnny-Jump-Ups, feverfew, rue, mallow, horseradish, lamb's ears, Lady's Mantle, as well as red/pink/yellow yarrow that return, some self-seed. Some are only decorative in my garden altho historically have been used medicinally. We removed 3 stones in our patio and planted creeping thyme which returns. I didn't plant it this year but had a welcome parsley volunteer in a part of my garden where parsley has never been. I've seeded various herbs over the years. One year I even seeded rosemary, which can be difficult, and had lots of little plants by the end of the summer. They don't overwinter outdoors and are not easy to keep as houseplants I've found. We have red clover growing wild and I may plant more as a ground cover in my new garden. One year I had 10 different kinds of mint and kept them all in large pots. We buried the pots to overwinter, left them in place and they started to escape. So all but 2 were moved next to the barn where I think the deer ate them and they disappeared. Historically gardens were grown primarily for food and medicine so herbals were part of this. The fact gardens are decorative was a secondary function, now of course frequently the primary function. I like a combination.

What fertilizer to use for herbs

Most of the popular culinary herbs don't want or need fertiliser - they prefer their soil poor. Potted plants, however, will need not to be ignored - they are high maintenance and you'll need to fertilise those from time to time as the nutrients leach out (this doesn't happen in the garden). I find that compost is a good fertiliser. I have only a teensy courtyard garden, so no space for a compost heap - so I buy it in bags. Whenever the soil level in pots gets a bit low, in goes a handful or two of compost. And while I'm at it, I toss handfuls of it hither and thither over the garden. Even changing the potting soil from time to time will be enough for many of your herbs - you'll do this for things like mint or lemon balm on a regular basis. Basil and chillies are greedy plants and will need more fertiliser than others. I suggest for beginners to use a slow-release fertiliser in pellets according to manufacturer's instructions around basil.

If I remember tarragon has a slightly licorice taste and there are two kinds, Russian and French. I think French is the best for culinary use. I am starting a new herb bed right outside the back door so I will be more tempted to actually use fresh herbs in my cooking. So far, I just have rhubarb and chives. I have sage in the garden that I dry and use each year. I have a rosemary plant in the milk parlor because it won't survive the winter. I need to try the 'Arp' variety. I had thyme until I accidentally tilled it up....need get more. I always grow basil in with the tomatoes and grow garlic in a row in the garden. I had oregano until it took over the world and I eliminated it. I have lots of bronze fennel that I save seeds and use in Italian dishes (licorice tasting too). I think there is an herb nursery in Buffalo I want to check out.

As a serious eggplant afficionada, i do all the usual suspects: parmigiana, ratatouille, hummus, etc.

But I recently discovered a new idea I had never heard of before despite my rather large collection of diverse cookbooks: Dust eggplant wedges with mix of cinnamon and nutmeg powders, spray or oil baking dish with light olive oil, place eggplant wedges in baking dish, skin side down, and surround with whole garlic cloves (peeled or not) and onion slices or wedges. Optional addition of raisins. Dot very liberally with butter and bake.

I think this is a Turkish dish, but definitely Middle Eastern. Try and enjoy!

I use the Tomato...sauce,sauce,sauce. Fry the EG put mozzarella,sauce sprinkle provolone cheese on top. Bake
it in the oven and...mangia!

I made a really nice eggplant dish just last night. Cut a large Black Beauty EP into 1/4" thick slices, layed them on baking sheets, brushed with olive oil and baked for ~20 minutes until tender, then layered them into a small backing dish with fresh tomato slices, oregano, pepper flakes, spinach (put a layer of tomatoes over the spinach and the moisture will help it wilt down and cook) and some mozzarella, with some salt, pepper and sheep's milk romano on top and baked at 350 for half an hour. We devoured it! I think it would be phenomenal with fresh basil, and you might be able to substitute in something like silken tofu if you really don't want any cheese in the dish.

I have 7 eggplants and they produce OK. Here is the way I cook it. I cut it in circles. I soak it in salt and leave it on the kitchen counter for 2 hours. The salts drains the water from the fruit. I drain the water in the sink and wash it very good from any salt. The eggplant is fried in veg oil then I fry some Garlic, add some basil and diced tomato and let it cook for 5-10 minutes then pour the sauce over the eggplant. In season now I eat that every day.

Eggplant is also good with oriental seasoning: soy sauce, ginger, garlic, green onion, a pinch of sugar, rice wine or dry sherry, maybe some 5 spice and Rooster red chili pepper sauce.

It goes well with tofu combined with oriental seasoning.

I never get a lot of eggplant at one time, so I stir fry it with other veggies. I make into an Italian dish.
Chop garlic
Chop eggplants in small bite
Heat Olive Oil in pan
Chop Onion
Chop Green or Red Pepper
Chop Onion
Chop quite a bit of Zucchini
Have a nice Italian Herb mix ready
Oh---and a tomato, chopped
last but not least, fresh basil if you have it, chopped
When the oil is ready add the eggplant and garlic. Stir fry eggplant first because it takes longer than zucchini. This all depends on how fresh and how large or small your chop is. (Remembering that you will be stir frying all the other veggies next) You just have to practice, but, of course, it's not hard.
Now---when you think it's time, add everything else, including the nice Italian spice mix.
Stir fry until it is done to your liking.
Optional: Turn heat to low and add a nice cheese over the top until melted, remove and serve (out of the pan)Yum
If you use a non-stick pan you don't have to use much oil.

I frequently cook up what beebonnet wrote plus variations. One is the beebonnet version with Italian seasoning. The other one is to to replace Italian seasoning with curry powder (I use McCormick's). Also try replacing Italian seasoning with lots of Basil and Chinese Hoisin sauce or Chinese Oyster sauce (with no cheese or tomato).
