heritage raspberries- i am totally inept.

I am sorry, this has been asked before. I have read all the posts and still can't seem to get it straight about the "mowing" in fall/winter.

I have 5 "plants"- that is what they were called when I bought them. Each "plant" is a stick with roots attached; I put them in the ground and now they are putting out green shoots. I assume these shoots are what will put out the raspberries. Now, are the sticks the "canes"? When people say to mow down the "canes" in the fall after the berries are done, how am I supposed to cut down these hard woody things? If I hadn't read all this stuff, my instinct would have been to back the shoots that are coming out now, so the "sticks" could make new ones next year. What is it here that I am not getting? For the record, I am a pretty good gardener, but this is completely eluding me.
