Veggies in my greenhouse

I considered posting this in the greenhouse forum but most of those postings are about the structure itself...so I hope it's ok here! Ya'll are just so smart!

My greenhouse is a pvc hoophouse with no temp control. We built it this past March so this is my first year using it. I want to grow some veggies to keep past the traditional growing season and I have some raised beds in the greenhouse. The daytime temp right now is 120 degrees plus on some days. What I'm trying to figure out is what can I plant in the raised beds that will survive the high temp now but provide some food on into the fall months. The sides of the greenhouse roll up about 3 feet for ventilation and of course there is a big door, but it's still very hot during the day. Should I start seeds in pots outside now and transplant into the raised beds later when the temps fall some?
