Am I just asking for trouble?

I live in zone 7 in southwest Washington on 5 acres in the country which slopes gently toward the west. Two years ago I cleared a couple of acres and now I think I would like to plant a small fruit orchard on this hill just down from the house. My main concern is that in the winter we get some pretty cold winds that come in off the coast. This year we had a week of temps in the 20's. Am I just inviting freezing problems or will the trees be hardy enough to handle it? I am thinking about apples, peaches, pears, and apricots.
