Both need plenty of water. The soil should be moist, and should never be allowed to dry out completely. The pineapple sage can do with full sun, the mint can use partial shade if the sun where you are is very strong. I think you're probably overwatering. The soil shouldn't be wet or soggy, just moist. A well-drained position is one which will allow excess water to drain away quickly - like on the top of a mound or hill, or in a pot with plenty of drainage holes and which is standing off the ground. A well-drained soil does the same by having lots of organic (plant) material (compost) in it. Do they perk up in the evenings? On a hot day, many plants will droop in the heat. Just like people.

I pour freshly boiled water over fresh herbs all the time to make tea. A sprig or two can also make cold water more appetizing or provide a change from plain water. It helps to roll the herb springs in your hand to help release the flavors. Whenever you are pruning herbs make a cup of tea to reward yourself. Adding honey or lemon can enhance flavor just as sugar and lemon enhances China tea. Almost all herbal teas have health benefits. Many books and websites will give you more information. All of us are different so watch yourself for any allergic or uncomfortable reactions. Some are not a good idea for pregnant women - like parsley can supposedly cause contractions. Moderation and self awareness are recommended. However, I have had many problems with prescription drugs and have never had any with herbal teas. I do not use more than a cup or two a day of any beverage and try to practice variety in my teas as well as my diet.

I worked out this recipe after trying Jacques Torres 'Wicked Hot Chocolate'(which was wickedly good but wickedly expensive to mail order). Wicked Hot Chocolate About a cup or a little more milk Two squares Ghiradelli 100% cacao about 1/4 tsp red pepper flakes dash cayenne about 1/4 tsp cinnamon 1/2 tsp vanilla (added after heating rest of ingredients) barely heaping to heaping tsp honey This may sound very weird, but it's dark, slightly bitter, strong and with a little afterbite of the pepper. And it's absolutely delicious. Use whole milk and maybe even add a little cream.
