My first trees. When to spray?

Hi. I have just received two Stark apple trees: my very first fruit trees: Granny Smith and Arkansas Black. I know the AB is controversial, but it's one of the very few recommended for Mississippi that will pollinate Granny Smith, so I decided that I will plant it for pollination and if I like it, that's gravy.

I have some questions:

The planting instructions said AB is good for cooking, but not for freezing or canning. How can that be?

Anyway, when should I begin to spray these trees? Do I wait until they are large enough to bloom or do I begin this year?

How effective are Organic sprays? I prefer organic, but I do want apples in a few years.

Would it be a problem to underplant these trees with flowers, or do they prefer to have their ground space completely clear?

I am a total novice at fruit trees, but have very many years of gardening experience. If you have any other wisdom for me, I will greatly appreciate it.
