Grape Pruning questions assistance (pictures)

So I just got done building that pergola and I had an already established flame seedless grape (the stand I built wasn't well thought out), the plant produced for us last year (so I think it's going on either 3 or 4 years old). But we got it on a mark down type deal and it came with 3 stems/trunks coming out of the root zone, so I am hesitant to chop out the trunks now, they are probably as thick as a quarter, or maybe a bit larger than a nickle. My question is... is it a bad idea to allow 3 vines from last years growth to travel up the Pergola, as I'm aware most use the head type structure to cover the pergola. I'm planning on growing additional grapes along the other remaining 4x4 post, so I can have a nice colorful pergola come grape harvest season. The Pergola is finished but there is quite a bit more work I will be doing around it, and for starters removing the grass and install raised beds, and filling the inside part of the pergola with nice river rocks.
