If not, what does it taste like?

The goats we raised for meat did not taste like lamb, more like beef. We raised Boer goats for meat and really enjoyed the meat. We had a lot of it in ground meat and chops. We cooked the legs like a leg of lamb. Nice, lean meat. I have never acquired a taste for lamb, always seemed perfumey to me. We fed our meat goats grass hay and a meat builder type of grain. As with any meat animal, they are what they eat, so what you feed them always has an influence on the taste of the meat.

We eat every dandelion and purslane that shows up anywhere in the flowerbeds or veggie garden. The lamb quarters are pretty decent eating, but like the OP says, you have to prepare them with some care. Purslane is good eating out of hand in the garden, and excellent in salads. Dandelion is so good for me healthwise that I put up with the hard stems and even look for it in shady spots after those in the sun have flowered. The other things I like are nettles, though there aren't any here (I considered planting them), a superior potherb (do not eat them raw, they sting badly, pick with gloves), grape shoots (to mix in salads with dandelions in April), of course I only pick the wild ones, and the wild chicories that I planted once in my lawn from a Territorial Seeds selection, and have naturalized over time. Corn salad and arugula also have naturalized around the vegetable garden. It's good to get early, nutritious free meals.

Spag, I can handle the gorgonzola on a salad, but Roquefort and that other Danish or whatever it is, is absolutely disgusting. Talk about smelling like vomit....YUCK! I just can't get past it and I'm pretty open to just about anything to try at first. Parmesan on the other hand hasn't been as offensive for me. PJ - I still want to know how you know what gasoline tastes like. Has anyone ever tried cream of arugula soup or the variations of it? Next season, I'm going to try a few of the recipes. Our weather here has been pretty bad. We got a huge storm with 51 cm of snowfall in one day last week. From what I'm seeing on the weather network, we will continue to have cold weather with below average temperatures. Also, following Marcia's theory of Good Friday, it's going to be colder than average here! I wonder if spring will ever come. As I look outside, all I can see is white. We must have 2 feet of snow out there and in some areas where the plows have been, the snow is up to the crown of the tree in my front yard. I am a little jealous of the people in Alberta who have had seasonably mild temperatures. My friend in Red Deer has been using her cold frame to acclimate her plants for the last week or so.

It's not anything that is known in these parts, But a large store about 50 miles from here had some. I bought about 5 lbs, and really "pigged out" (for lack of a better term) that night. I have the rest in meal sized packages in the freezer. I use them as a 'reward' for myself when I accomplish something I've been dreading doing! "I don't get it. Fish is fish. I WANT it to taste like fish. I don't want it to taste like beef, chicken, or anything else. " I agree with that 100%, too. I like to 'eat healthy', and I try to most of the time. But I am not willing to torture myself with food I don't like. If I were intent on giving up red meats, I would try to find something that I enjoyed To replace it with. As many have mentioned above, There are a number of very mild tasting fish. Preparing/serving them with a highly seasoned sauce might do the job for you. Good luck in your quest. Rusty

I agree with Oberhasli1. It taste like a mild beef. Much lighter color than beef. More like pork in color. I found the meat to have a stringier grain than beef. Great in stew and bbq. Just about any way you fix beef or pork.

Oberhasli - you said you raise boers. Any obies. I've got a herd of unreg. obies I'm rebuilding. (Had 120 head last year but getting down to just a few. Busy with grandkids these days. I usually cross mine out a little to keep them hardier. I haven't found too many in my neck of the woods that raise obies. So my choice of breeding stock is limited.

Mike, yes I raise Oerhasli's. We sold our breeding stock of Boers when my son went off to college. We have had Obers for 12 years. I don't know where you live but we are in Black Forest, Colorado. I have quite a few friends that raise Oberhasli's as well here and one of them is having a herd reduction sale right now so if you would like to email me privately (bijou@datawest.net) we can talk.

Chevon is much leaner than mutton, and all goats can be a little gamey (especially if a functional billy is around). Cabrito/Kid is similar to lamb, but with a texture more like that of lean beef or bison. It becomes difficult describe the taste at this point, much like comparing pears to apples. Goat meat can actually be rather sweet at times, not as sweet as muskox (which, barring you moving far north you probably cannot find) but noticeable.

I've heard the same thing about the functional billy influencing taste of goat. I don't think it tastes anything like lamb, either.
