Spray tank pH buffers

My water has a pH of 7.8. I read recently in the 2009 Midwest Fruit Spray Guide that some pesticides Malathion and Captan break down rapidly in alkaline water leading to a less active compound. Are there any simple buffers such as vinegar perhaps that would do the same as a commercial buffer and not cause any plant injury? I also have a vague recollection that "free copper" formulations (IE Kocide) don't do well with alkaline water. The Kocide 2000 label has only one pH reference which is not to let the spray mixture go below 6.5 or phytotoxicity may occur.
