Lettuce, Spinach, Cucumbers, and Squash

Hi all,

I planted some lettuce and spinach 2 weeks ago and only a fraction of the seeds actually sprouted. When they did sprout, they appeared in places nowhere close to where I planted them. Is this normal? It also seems like the lettuce and spinach I planted is being killed by the south Texas heat...

My squash and cucumber plants are also dying out, but my zucchini continues to thrive. Is it possible that the heat is also destroying these plants. The rest of my garden is fine, except for the fact that all of the plants quickly wilt if they do not get enough water EVERY day.

I appreciate any advice/criticism.
