How do you start the Fall garden?

This year , with a nicer and larger garden area I'm going to make an effort to put the garden to use all year. From what I have read here in the forums about Fall gardens I can't figure out how you actually make the transition from summer vegetables to fall vegetables in garden beds where summer vegetables currently reside. I can tell I will need to start plants growing indoors and I will also need to ensure the plants I am growing are meant for fall harvest (going from warm weather to cool weather) but what I'm wondering is if the bed you are currently using has vegetables still growing in it and the vegetables are still productive how do you start planting your fall vegetables in that same bed?

Here in Texas I would think that line between summer and fall would have to overlap some where it's not too cold for summer vegetables and not too hot for fall. I would also think you just wouldn't want to discard your summer vegetables if they still have time to be productive.

So what is the solution other than different beds?
