Something different for potatoes...

Most of my garden spaces are in the ground, bordered by black edging, trying to keep most of the grass out. I really like this look (and we have lots of room) but I want to try something different, for the potatoes.

My nieces and nephews like to help me in the garden and potatoes would be a fun vegetable for them to grow. We have clay soil and I would like to try growing them in raised beds or even tires, with either soil or hay/straw over them. This is my first time trying this...so any ideas/recommendations?

The more crazy and fun, the better...the nieces and nephew that really like to garden are from 5 to 12 years old. Also, any other veggies that we can grow, if we use raised beds, so we can rotate them? We have an area about 25 feet long and maybe 6 feet deep...just for this 'project'. We also have a couple of 12' x 4' metal cattle panels (I think they're called) that we can put behind this area, too, if that gives anyone some good ideas. Thanks in advance :)
