Need advice in updating our pool area/backyard

My wife and I have been looking at how we can update the look of our pool area. We have tons of room (the land behind the fence in the attached pics is ours also.)

The tan stone (2-3 inch diameter) has been annoying me since we moved in 3 years ago. I need to find someone to haul this stuff off (got a quote for $800 to remove). Once this is done, we would like to do pavers in that area, along with some landscaping and possibly pavers along the left side where there is the small area of grass.

What I would really like to update is the decking around the pool. As you can see from the pics, it is basically a 4 foot wide sidewalk. What I have been told and have been reading is the concrete decking is a good choice and to leave it alone. My concern is how pavers (probably a tanish color to match the house) will look adjacent to the existing decking.

The existing decking is in pretty good shape. Only really crack is in the one pic below. What I would love to do is add some planting boxes using for example EP Henry block/pavers. I must is also a built in grill and bar w/stools type of setup. In some of the open areas we could add a couple of tables with umbrellas.

The grade is very flat in our backyard, but as you can see from the pics we do have some nice room to expand, even if we do this in phases. The existing chain link fence will be history very shortly (need to find a nicer replacement, probably iron fence).

Any thoughts, ideas, experience would be greatly appreciated.
