Celeriac and cutting celery questions

The seeds for my new veggie garden are arriving in the mail (yay!), and as I was going through the latest batch I remembered that I'd purchased seeds for both cutting celery and celeriac.

I know that both these members of the celery family are more garden-friendly than standard celery, and both benefit from rich soil and frequent watering. Any other words of wisdom from others who've grown them? Have any of you ever tried overwintering cutting celery, then letting it go to seed the second year, for seed-saving and/or culinary purposes? Any storage tips for the celeriac? (We have a crawlspace under the house that we figure stays about 40-50 degrees during our Michigan winters I do a lot of cooking, and love the flavor of celery, but there's so much waste and pesticide use with supermarket celery that I wan to try these crops for a more sustainable (and perhaps more tasty) alternative.
