Project Help: Getting carrots to set seed in the first year

So - what I would like to do this year is to grow carrots from seed. Get them large enough to harvest. Place in the fridge for a couple of weeks (or another process to make them go dormant). And then replant and see if I can get them to bolt and set seed in one growing season.

Has anyone tried this before? I am not sure why it shouldn't work... Suggestions?
