bonsai less hardy than same species growing as a normal tree?

I have collected numerous tree species that are supposedly hardy to my area. I plant on planting them in the ground and letting them thicken for 4-5 years. I recently read in a book that several of them need to be sheltered even though zone maps say they should be fine. If im not doing any fine prunning and instead am just doing trunk chops and trunk thickening, then is it safe to leave them in the ground? Should the small, rooted cuttings be put under shelter (a garage) for their first winter (our snow gets deeper than they are tall) thanks?
