medical school, sink a pot? or plant strait in ground?

Hello,

Im leaving for medical school and currently have about 30 species that are cold hardy for my climate, (most are sturdy decidous, some are seqoia and gingko 4" seedlings) I want them to be big bonsai some day, via trunk chops once a year or something like that. I can plant them in the vegetable garden at my parents house, but dont know whether they would get root bound in a large pot sunk in the ground, or should I plant them strait in the dirt, and chop a couple big roots every few years? thanks.
