collecting deciduous from the wild

Sorry for the vague question, but im finding different opinions on collecting from my different books

Even though not ideal, is collecting from wild possible in late fall?

Should I do it after the sap has fallen?

What roots do I cut (all at once or 1 per week...?)

I hear of huge trees being dug and fit in super shallow pots after a couple years. What happened to the tap root?

Can a big dug stump be leafless for more than a year (miss a growing season) then eventually send out a shoot?
