Well I went from a regular electric oven to a convection gas oven. I was originally going to go duel fuel..but then decided that the cost didn't give me a worthy benefit. I don't broil so I can't say anything about that option..and when I realized just how much power that fan took to run, I didn't convection cook either. I just roast in my gas oven...I used the convection button exactly 3 times since I've had it 3 years now..and those were in the first 3 months I had it. I did not find myself having to make any changes in the way I baked or roasted between the electric range I had and the gas one I have now. OOOhhh other than..takes less time to reach temp when preheating..the oven stays at the right temp better and you need a bit more "clearance" around the pan to the edges of the oven. The sides seem to retain the heat much better than my old electric.

That said, I am continually amazed and disturbed by the amount of misinformation/disinformation that is disseminated in so many places on the Net as "advice" and "expert opinion." It's frightening how much of it is little more than hearsay or anecdotal in nature. I don't by any means claim to have all the answers, but in my efforts to educate myself, I've at least managed to come across details of some formal studies that have been done about a number of concerns that people may have regarding vent-free gas appliances. If nothing else, it's interesting reading and provides something more than the "my opinion," "I heard,", or "so-and-so says" type of often-misleading advice that emanates from forums like this. Admittedly, it is published by a potentially biased trade organization, but it at least presents the issues in a relatively objective way. If anyone has sources of equally-rational contrary information, I would love to hear of it...

If you're looking for the opinion of an EE, I would gladly give you my opinion on the subject -- if you'd like it in writing, I can even sell your wife a certificate saying as much! Maybe that wouldn't help. I don't know. What are we talking about, anyway? Cooktops aren't always-on. They're either off until turned on, or pulsing infrequently to check if a pot is present. The RMS EMF at the surface is not very large either way, when not actively heating something. When heating, it's only large under the work being heated. EMF drops off rapidly with distance. If your wife is so strange that she finds it enjoyable to read books while laying over the cooktop, I might be concerned, but only for mental health reasons, not for EMF reasons. Or if shoving her head towards a pot that's being heated, I would be more concerned for safety reasons, and then mental health reasons... There are biological effects of EMF, but not at these field strengths. Not by orders of magnitude. The primary effect is simply dumb old heating. Diathermy machines, microwave ovens, and the military's ADS, operate on this mechanism. There is no biological effect beyond heating (obviously, too much heat and you cause burns, but that's not unique to EMF). Strong pulsed fields can induce voltages in neural tissue (transcranial magnetic stimulation), which do have direct neural effects, but these are temporary. Anything that produces fields with too little energy to cause noticeable heating, or pulse peaks strong enough to cause noticeable induction, is completely and utterly inconsequential. Example: ESD can have quite large (peak) EMF, but is over very quickly, and delivers very little energy (on a human scale). (Anyway, sparks are well known to cause people to involuntarily jump or twitch. But again, that's just a neural stimulation thing, nothing more.)

The area inside the bump out is only partially insulated. There is no insulation on top so the cold air just comes in through the vented soffit. If there is going to be an electric fireplace inserted, can we close off the soffit or do we need to leave it vented?
