Comments (34)Thank you all-- I had a lovely couple of days relaxing and visiting with mom and sister. All the local family stopped over Wed evening ... there were lots of laughs and a table full of nibbles and treats. I did not have any of the desserts/sweets but I did nibble more than I should have and had a number of cocktails over the stay. I was good yesterday but am to go out to brunch and to taste cakes today. I am not all that invested in getting the perfect cake selection-- I know all will be good so I think I'll leave it to my niece to select the cake/flavor. I should be able to make good brunch choices based on the menu. I have been pretty busy and active but no conscious exercise. I am going to spend some more time cleaning the basement this weekend to get my exercise area ready to go. I don't spend much time there (clearly lol) so it never gets my focus when cleaning-- so the amount of dust and spider webs is embarrassing. It shouldn't take long to cleanup though and I will keep it up after this. I was up 2lb yesterday but I am certain it was a temp reaction to the foods and alcohol consumed. I will weigh in tomorrow and cross fingers that I am still down 1 lb from last week. The good news is the actual party next week shouldn't provide the same food challenges-- as there will be good options for me. Comments (29)Tonight's dinner was a new one for us, from a magazine cookbook I bought called "Eat to Beat Inflammation" by Better Homes and Gardens. Note: my local grocery almost never has escarole so I made this with baby spinach and chard. You could also use bok choy and just sprinkle dried fennel on it. Or sub two stalks of celery sprinkled with fennel which is what I often do since fennel can be pricey out of season. I also added about 2/3 pre cooked brown rice at the end to mix with the spinach. I special ordered some Lundberg short grain brown rice and we love it. Ingredients: 2 boneless pork chops 1/4 tsp kosher salt 1/4 tsp freshly cracker pepper (Note, I used a steak seasoning that had dried garlic along with the pepper) 2 TBLSP olive oil 1 head escarole, 12 oz which is 4 packed cups. Roughly chop 1 medium fennel bulb (that's too much. I didn't have the bulb part, had already used that so I sauteed the chopped up tops along with some of the leaves. About half were too wilted.) 2 TBLSP shallot minced (2 small shallots or one large) 1 TBLSP white wine vinegar 1/2 cup water (I used chicken broth) 1 TBLSP Dijon mustard Start by sauteeing the fennel and the shallot in a braising pan with the olive oil. I had to add a few splashes of chicken broth towards the end because the shallot was browning too fast. When they are about 2/3 done, add the seasoned pork chops. to the middle of the pan. Cook for 3 min. on medium high, with the cover on. (This is where I had to add some chicken broth to prevent the shallots from scorching) Meanwhile, combine the dressing ingredients (water or chicken broth, vinegar and mustard) Flip the pork chops after three minutes. They should be nicely browned. Add the chopped greens around the edge of the pan and over the flipped chops, and pour the dressing over the spinach. Cover and sautee for about three more minutes. A little less if your chops are thin. Maybe two. At this point, my spinach wasn't quite wilted enough for my taste so I took out the pork chops and set them aside temporarily on a small plate. I added some short grain rice I already had cooked (~2/3 cup) and sauteed the mixture for about a minute more. Popped the pork chops on top of the mixture to take to the table. Served it in a pasta bowl. Very good and filling, although we had a tiche of left over potato salad to go with it. This would pair well with roasted veggies particularly some type of squash. Or corn on the cob or some french bread for sopping up the juices at the bottom of the bowl. Of course this is if you aren't carb averse. If you are, then more greens and no rice. Comments (11)Sorry to hear of illness and injuries. DH and I are home today, and it will be very rainy both today and tomorrow, so no outdoor workouts. I tried to book mat Pilates classes at two different Y branches, and they were full probably because many people off work, so I guess I will use the treadmill and do some dumbbells and planks here. I will do step in the morning probably inside again. The Y will be closed on Easter Sunday, but it might be nice enough to go for a walk. Weight is down a little bit so I am happy about that. I could really see a change when I got dressed yesterday. I think I mentioned the Pilates studio is moving to a new space? She's had so much success she needs more space and has hired a second instructor. She will still do private lessons but they will offer group reformer (up to 4 eventually) and also barre which I've always wanted to try. So, I'm pretty excited about that. The new space is actually even closer to my office. I somehow cracked the screen on my Fitbit Sense and it also died, which may be related, but I recently ordered the Sense 2, so I have set that one up. It has basically the same features, and my extra bands still work with it. Food has been good, and we are thinking about what to cook for Easter brunch. MIL will come over, and she suggested salmon. I'm all good with that! I bought some local strawberries which were so incredibly good. Have a good weekend everyone. Comments (16)Sorry for everyone who is dealing with illnesses. It is so difficult to keep on track when stuff comes up. Gscience you have my admiration for focusing on your exercises. For many years with my physical struggles I used my health problems as an excuse. No more. As far as I'm concerned never again. But I really do believe we all have to decide for ourselves whether we are going to struggle with this or use our energy for something else. I hope this procedure you have done was helpful and took care of the problem. Hugs to you. Hugs to everyone. For me it's the cold I had for two and a half weeks. It has finally loosened it's hold on me. Also the stupid migraines. B2 vitamins seem to be taking the edge off so hopefully they will work as well as the flax oil did that took my migraines away completely for those 5 years. Exercise is going well. I am generally sticking to it. I do the exercises three times a week but I also don't do it exactly on the same day some weeks. Yesterday I was playing catch up for Wednesday's exercise day. I will likely fudge it and do it later tonight for my Friday so I don't have to do those kind of exercises on Saturday and Sunday. I truly love my weekends off. So in general with the exercises intermittent fasting and trying to get a handle on my health things are working. I have to watch my cheese intake darn it. I love cheese.
