as for your marble behind the cooktop, i've had tumbled marble behind mine and didn't have issues. It was this stuff. I kept it sealed every few years.
the only thing that's going to etch the white marble is acidic stuff or improper cleaners you may use. Honed marble won't show etching as much as polished marble. I have honed on my bathroom floor. even water drops that sit for too long leave marks. can't see it unless the sunlight hits it at the right angle. When you have marble in the kitchen, you have to embrace small defects that will occur over time. it's just part of the character. The sealing will prevent stains from setting immediately, but will not make it stain-proof.
So, unless you fling tomato sauce against the wall, you'll prob be ok.
I just ordered two full sheets of the same type they carry on Tilebar. this one in gray, and the other color in black/white. I have a small sample I got from TB, but I want to see how a full sheet looks. they're only $21 , so not too bad to see if I really like it. and these rectangles are actually larger in person than they look in the pic
only use alkaline cleaners for marble. I like StonePRo and use this in my shower.
