while santa cecilia wouldn't be my first choice, it looks fine in your kitchen.
you must go to a stone yard and walk around the giant slabs to get an idea of how it looks. if you go to Home Depot, they show you tiny samples. granite slabs vary greatly. if you're dealing w/an entry level granite, you're going to get the very basic, cheapest looking variety.

if you keep it, get some decent hardware for the cabs. those dinky knobs are too small for those tall upper cabinets. find some nice handles. this style is nice and you can find it in nickel
for a splash I'd go w/a creamy white, larger subway. done like this if you like. Byzantine-tilebar.com
or this on in ivory
