Look at Outwater Plastics, specifically their lighting. Here's a link: http://www.outwatercatalogs.com/lg_display.cfm/page/20/catalog/Master_Catalog_Vol_42. Copy and paste into your browser if it doesn't display as a link. In addition to tape LEDs, they have various aluminum channel for mounting tapes, including at an angle so the undercabinet lights can "wash" the backsplash. The biggest obstacle you may face in a remodel is having to use LEDs powered by a 12 or 24-volt transformer. Then, where do you hide the transformer? That, more than the installation itself, can be the major headache. I'd suggest on top of the cabinet(s), if accessible. If not, then possibly in an adjacent cabinet (if available), hidden behind wood doors. Outwater also has vertical display lights to illuminate a specific shelf or shelves. Switching lights on and off can also be a problem. I always try to use line voltage LEDs where possible. You may also want to look at Eterna Lighting:http://www.eternalightingstore.com/.
