You need to do a careful assessment of what you do there now, and what you most need the space for. Right now you are making do with what you have - what you need is to optimize not only that space, but see if you can get better function from your kitchen by using this space effectively.
When I remodeled my kitchen, I had a list of spaces I needed, that I didn't have. I tried very hard to clear my head of where things were in the old kitchen, so I didn't fall into the trap of "this goes here, because that's where it's always been". some of my goals, and solutions in parantheses:
- clutter off the counters (knife drawer, charging station in a cabinet, place for canisters, designated space for small appliances, so they get put away after use)
- a place for water bottles (pantry cabinets)
- a place for cookbooks (pantry cabinets)
- a place for my purse and work bag (pantry cab)
- a place for beer and pop (pantry cab)
- eliminate kitchen desk! (part of pantry cab is file drawers; two short drawers hold pens, scissors, stapler, etc; one cabinet is my "desk", with my folder for bills, as well as a place for a container of dog food and a shelf for dog stuff, like brushes, nail clipper, treats, etc)
Having a list of what I needed helped me to plan the floor to ceiling pantry cabinets to fulfill all of my needs. It's been 7 years, and just today, as I was putting away a case of pop in its designated spot, I patted myself on the back for making a place for it (instead of stacked up next to the fridge, as in the old kitchen).
If you think carefully about your needs, the best use of that space will come to light. Counter space? More drawers? A place for less-used stuff that it taking up valuable real estate in the main part of the kitchen? Let the needs dictate the use. While you're at it, think of a place you might be able to re-purpose the desk and cabinets you have.
