I made some muffins yesterday with the rest of the rhubarb; except for a few stalks left which I cooked down into a sauce. I'll have that over ice cream :-)
My muffin recipe that I've been making the past several years calls for setting it overnight sprinkled with sugar to get the juices out. Also soaking oatmeal in buttermilk. So it's definitely a planned muffin recipe.
I was planning on making them Saturday but a friend called Friday night and wondered if I wanted to go to a small town, an hour away to see some horses and some dog agility trials on Saturday. It was a gorgeous sunny albeit hot day. We were sitting on the top bleachers and I couldn't get good shots of the dogs. So I soaked the rhubarb and oatmeal Sat nite for Sunday baking.

Summer is here. Sigh. We're short on rain already, and I noticed that 2 huge maple trees across the street, the leaves are smaller, and 50% of the leaves on the tree are already brown. We had a drought last summer, and crops really suffered.
I cut up a bunch of vegetables, steamed some asparagus and frozen corn to add to it. Put some Italian dressing on it. In an attempt to eat healthy. But darned if the sausage in my freezer was yelling my name. Oh well I tried.
